This morning I am going to prepare one of our favorite easy meals, whole crock pot chicken. I have tired many recipes but this one is simply the best we have come across. Check out the recipe found on Lisa Leake’s blog 100 Days of Real Food.
Do you get tired of having to work in the kitchen preparing dinner? Are you pressed for time at the end of the day? I know often when we arrive home the last thing I want to do is cook dinner after a long and busy day but someone has to feed our hungry crew!
I love using our crock pot because it’s so nice to set it and forget it until dinnertime! Whole Crock pot chicken may be a solution for you and your family too!
Lisa’s recipe is such an easy meal to prepare because I stick it in the crock pot in the morning and by early evening it is finished. Or house smells fabulous!
There is nothing better then walking in to the savory smell of dinner finished in the crock pot!
I usually prepare some rice to go with the chicken and serve a side salad to complete the meal. Talk about a delicious and simple meal! If you have a rice cooker preparing dinner is even easier!
When it is complete I debone the chicken and throw the bones back in the crock pot to make the most delicious and nutritious bone broth!
- fill crock pot with water to cover bones and cartilage.
- Cute up 2 or 3 celery stalks and add to the crock pot.
- Chop up two large carrots & add to crock pot
- 1 chopped onion
- a couple of garlic cloves
- add 2 tsp. of apple cider vinegar
- Then let it cook on low overnight.
When I wake up in the morning I have the most delicious bone broth ready for my next soup or sick kid whichever comes first! You can also freeze the bone broth for another day if you don’t have plans of using it within a few days. This is simply the best recipe, you really should try it!
